Chicken Larb

Ingredients:

  • 1 pound ground chicken (preferably white meat)
  • 1 red onion, halved and thinly sliced
  • ¼ cup sliced scallions (mostly white parts)
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon finely chopped fresh mint (optional)
  • 2 teaspoons minced fresh ginger
  • 1 teaspoon lemongrass paste (optional)
  • 1 teaspoon fish sauce, or more to taste
  • 1 teaspoon red pepper flakes, or more to taste
  • 1 teaspoon sea salt

How To Make Chicken Larb:

  1. Heat a large skillet over medium heat.
  2. Add chicken. Cook and stir until chicken is broken into little pieces, about 5 minutes.
  3. Add red onion and scallions.
  4. Continue to cook and break up the chicken until browned, about 2 minutes.
  5. Add cilantro, mint, ginger, lemon grass, fish sauce, and red pepper flakes.
  6. Cook and stir until flavors blend, about 3 minutes more. Season with sea salt.

सामग्री-

  • चिकन लेग- 2 
  • साबुत काली मिर्च- 1
  • चम्‍मच लहसुन- 7 कलियां
  • अदरक- 2 इंच
  • लाल मिर्च पाउडर- 1 चम्‍मच
  • चिकन मसाला - 2 चम्‍मच
  • मैदा- 1/2 कप
  • तेल- 2 कप
  • नमक- स्‍वादअनुसार

स्‍पाइसी फ्राइड चिकन लेग रेसिपी को बनाने की विधि-

  1. चिकन लेग गे दो पीस लें और उन्‍हें चाकू की मदद से स्‍लाइस कर लें, जिससे कि उनमें मसाला अच्‍छी तरह से समा जाए। 
  2. फिर काली मिर्च, अदरक और लहसुन को एक साथ मिक्‍स कर के उसमें स्‍वादअनुसार नमक डालें।
  3. इसके बाद लाल मिर्च पाउडर और चिकन मसाला डाल कर पेस्‍ट बनाएं।
  4. इस मसला पेस्‍ट को चिकन लेग पीस पर लगाएं और 30 मिनट तक छोड़ दें।
  5. 30 मिनट के बाद तेल गरम करें और जब वह गरम हो जाए, तब उसमें चिकन लेग एक एक कर के डालें।
  6. मसाला और चिकन अगल नहीं होना चाहिये।
  7. आंच को लो कर के चिकन पकाएं।
  8. फिर पैन को करीब 5 से 7 मिनट तक ढंक दें और तब तक पकाएं जब तक कि चिकन क्रिस्‍पी ना हो जाए।

  2. Add mustard oil, crushed garlic and saute.
  3. Add kadaknath and fry it.
  4. Add water, salt as per taste, turmeric powder and stir it.

  6. Crush the red chillies along with mustard oil and salt.
  7. Add wheat flour, chilli paste and mix it.
  8. Garnish with coriander, green chilli, onions and serve.

This casserole is perfect for a busy night and packs lots of flavor. You couldn’t get any easier made with ingredients you’re bound to have on hand.

Creamy chicken and broccoli, topped with my favorite crackers of all time, Ritz crackers, then slowly drizzled with some melted butter and finally baked until the casserole gets all bubbly and the crackers form a crispy topping. Need I say more? You’ll not only be blown away with the simplicity here but also the drool worthy flavors we’re accomplishing in the kitchen today.

Ingredients In Chicken on the Ritz:
Soup – Just 1 entire can of cream of chicken soup is all we need.
Sour cream – This will give us creaminess, tang, and acidity. These flavors are important for ensuring our dish doesn’t get too one note.
Chicken – Cooked chicken, cooled and cut into cubes.
Broccoli – We want to chop up the florets into bite size pieces and use just those in our dish.
Topping – Crushed Ritz crackers and unsalted butter, so easy.

Ingredients:

  • 10 3/4 oz cream of chicken soup (1 can)
  • 1 cup sour cream
  • 3 cups cooked chicken breasts cut into cubes or shredded, about 4 breasts
  • 2 cup broccoli florets
  • 4 oz Ritz crackers
  • 1/2 cup butter melted

How To Make Ritz Cracker Chicken Recipe:

  1. Preheat oven to 350 F degrees. Spray a 9x13 casserole dish with cooking spray and set aside.
  2. In a bowl whisk the cream of chicken soup and sour cream together.
  3. Add the chicken, broccoli florets and toss it together with the cream of chicken/sour cream mixture, making sure each pieces is coated fully.
  4. Add the chicken and broccoli to the casserole dish.
  5. Add the crackers to a food processor and pulse a few times until the crackers resemble breadcrumbs.
  6. Sprinkled the crumbled crackers over the casserole the chicken and broccoli and then drizzle with the melted butter.
  7. Bake for 40 minutes until the casserole starts to bubble and the crackers start to turn golden brown.

Notes:

  • Greek yogurt can be used to replace the sour cream.
  • Rather than use cream of chicken soup, feel free to sub in cream of mushroom soup.
  • Cauliflower, green beans, peas, etc. can be used instead of broccoli.
  • Feel free to add cheese to this dish. Either mixed in with the chicken and broccoli, or on top with the crackers.
  • If you don't have a food processor you can put the crackers into a ziploc bag and crush them with a mallet, or even your hands.
  • Store in an airtight container for 3 – 4 days in the fridge. If freezing ensure that your dish is wrapped in both plastic wrap and aluminum foil to prevent freezer burn. Be sure that your dish has fully cooled before it is placed in either the freezer or fridge because otherwise it will not cool properly.

Kadai Chicken recipe | Chicken Karahi Recipe With Ingredients

Chicken kadahi, also known as gosht kadahi (when prepared with goat or lamb meat instead of chicken), and kadai chicken, is a dish from the Indian subcontinent noted for its spicy taste; it is notable in Pakistani and North Indian cuisine. The Pakistani version does not have capsicum or onions whereas the North Indian version uses capsicum. The dish is prepared in a karahi. It can take between 30 and 50 minutes to prepare and cook the dish and can be stored for later consumption. It can be served with naan, roti or rice. Kadai chicken is a delicious, spicy & flavorful dish made with chicken, onions, tomatoes, ginger, garlic & fresh ground spices known as kadai masala.


Kadahi Chicken




Cuisine: North Indian

INGREDIENTS :

  • 400 grams chicken
  • ¾ cup capsicums (or bell peppers cubed) (optional)
  • ½ cup onions (cubed & layers separated) (optional)
  • ¾ cup tomatoes (chopped & pureed) (about 2 large)
  • 1 ½ tablespoons oil (divided, adjust as needed)
  • 1 red chili broken
  • ½ teaspoon cumin or jeera (optional)
  • ½ cup onions chopped finely
  • 2 teaspoons ginger garlic paste
  • ½ teaspoon Salt or as needed
  • ¼ to ½ teaspoon red chilli powder Kashmiri (optional)
  • 1/8 to ¼ teaspoon turmeric
  • 10 cashew nuts (or 3 tablespoon cream)
  • 1 teaspoon kasuri methi (dried fenugreek leaves)
  • 2 tablespoons coriander leaves or cilantro finely chopped

For kadai masala

  • 1 ½ tablespoons coriander seeds (or daniya)
  • 4 red chilies
  • 1 to 1½ teaspoons garam masala powder
  • ¾ teaspoon fennel seeds (optional)


HOW TO MAKE THE RECIPE:

Preparation:

  • Dry roast 1 ½ tablespoons coriander seeds, ¾ teaspoon fennel seeds and 4 red chilies until crisp & aromatic.
  • Cool and powder them in a spice jar along with 1 to 1½ teaspoon garam masala.
  • Add ¾ cup chopped tomatoes to a blender and puree them. You can skip this step if u don’t mind using tomatoes directly.

Optional : Substitute to cream. You can skip this step if using cream. Soak 10 cashews in warm water for 10 minutes. Then make a fine smooth paste adding 4 to 6 tbsps water.


How to make chicken karahi or kadai chicken:


  1. Add 1 tbsp oil to a kadai or wok. When the oil turns hot, add ¾ cup cubed capsicum and ½ cup cubed onions. Fry for 2 minutes on the highest flame. When you begin to smell them good transfer to a plate. Keep it aside.
  2. Heat the kadai with 1 tablespoon oil. Then add 1 broken chili and ½ teaspoon cumin.
  3. Fry till the cumin begins to splutter. Add ½ cup finely chopped onions and fry till they turn golden.
  4. Next add 2 teaspoons ginger garlic paste. Fry till the raw smell goes off. Do not burn it.
  5. Add chicken and fry for 3 to 4 minutes. Cover and cook for about 5 minutes.
  6. Add kadai masala, turmeric and ¼ to ½ teaspoon red chili powder (optional).
  7. Mix and fry well for just 2 to 3 minutes.
  8. Next pour tomato puree, cashew paste and add salt.
  9. Mix and cook till the raw smell of the tomatoes goes away.
  10. The masala thickens and begins to leave oil. Cover and cook until the chicken is soft cooked.
  11. Add sauted onions and capsicums. Mix and continue to cook for 2 to 3 minutes.
  12. Cook till the gravy thickens to your desired consistency.
  13. If using cream, pour the cream to a bowl. Take a portion of the gravy and mix with cream. Add back to the kadai and stir well.
  14. Do not overcook kadai chicken. Capsicum and onions should be crunchy.
  15. Sprinkle crushed kasuri methi and coriander leaves. Mix well and cook for just one to two minutes. Off the stove.
  16. Serve kadai chicken with rice or roti.

Tips to make kadai chicken:

  • Bone-in chicken tastes best in this recipe as the juices from the bones seep to the curry and make it more flavorful & delicious. However if you do not have bone-in chicken just use boneless chicken like the way I have used.
  • Kadai chicken is made with fresh ground kadai masala. This recipe also details on making it. You can however use readymade kadai masala powder. If you are accessible then just use a regular garam masala. You really cannot get the flavors of kadai chicken but it will still be a very good dish.
  • Most restaurants use cubed onions and bell peppers. However you can also skip them as it is not used in the authentic kadai recipes.
  • Frying the cubed onions & bell peppers on the highest flame will give a smoky aroma to the kadai chicken. You can skip them and just smoke the dish with a charcoal.
  • Optionally to smoke the kadai chicken, just light a charcoal until hot and place it in a small bowl. Keep this bowl in the kadai. Pour 1 tsp ghee. Immediately the charcoal begins to release smoke. Cover the kadai and allow the cooked chicken to be smoked for about 2 to 3 mins.

Butter Chicken

Ingredients of Butter Chicken:

  • 1 kilograms chicken
  • 2 tablespoon refined oil
  • 1 teaspoon red chilli powder
  • 1 1/2 cup tomato puree
  • 2 teaspoon coriander seeds
  • 2 crushed cinnamon
  • 5 green chilli
  • 4 clove
  • 500 gm butter
  • 4 red chilli
  • 1 teaspoon coriander powder
  • 1 1/2 teaspoon kasoori methi powder
  • 2 bay leaf
  • 2 teaspoon salt
  • 2 medium onion
  • 4 handful crushed dried fenugreek leaves

For Marination

  • 2 teaspoon onion paste
  • 1 teaspoon garlic paste
  • 1/2 cup yoghurt (curd)
  • 3 green cardamom
  • 1 teaspoon ginger paste
  • 1 teaspoon mace powder
  • 2 black cardamom
  • 1/2 teaspoon sugar

For Garnishing

  • 3 tablespoon fresh cream
  • 1 handful coriander leaves

How to make Butter Chicken:

Step 1- Prepare the marinade and marinate chicken overnight

To prepare this mouth-watering chicken recipe, first prepare the marinade for the chicken. For the same, take a large bowl and mix together yogurt, onion paste, green chillies, ginger-garlic paste, sugar, salt, green cardamoms, black cardamoms, and mace powder. Add pieces of raw chicken in the bowl and mix well. Allow the chicken to marinate overnight. Once the chicken is well marinated, roast it in a tandoor or an oven till its 3/4th done.

Step 2- Prepare the masala and then blend to make puree for the gravy

Now, heat little butter in a pan over moderate flame. Add bay leaves, cloves, cinnamon, red chillies, and crushed coriander seeds. Sauté the ingredients for half a minute. Now in the same pan, add a bit of onion, red chilli powder, coriander powder, kasoori methi powder and tomatoes. Sauté them for 5 minutes and once done, transfer the mixture in a blender to make a puree.

Step 3- Cook marinated chicken in the gravy

Heat the remaining butter in a pan. Add the pureed mixture and bring it to a boil. Add marinated chicken pieces, salt, fresh cream, and mix well. To make sure that the consistency is not too thick, add some water to the mixture. Now add sliced green chillies, crushed fennugreek leaves and let it simmer for few minutes. Bring it to a full boil.

Step 4- Garnish Butter Chicken with cream and serve hot

Transfer the dish to a serving bowl and garnish it with coriander leaves and cream. This butter chicken recipe is easy-to-make and can be made by using simple ingredients available in the kitchen. If you're a spice junkie and love all things spicy, then customize this chicken recipe a bit by adding more green chillis or black pepper powder. Try it and relish the burst of Indian flavours. Chilli Chicken Recipe with Ingredients

CHILLI CHICKEN

Ingredients :

  • 350 Gram boneless Chicken (diced)
  • 1 Egg (slightly beaten)
  • 1/2 cup cornflour
  • 1/2 tsp garlic Paste
  • 1/2 tsp ginger Paste
  • 1 tbsp salt
  • To deep fry oil
  • 2 cups onions, sliced
  • 2 tsp green Chillies, sliced
  • 1 tbsp soy sauce (adjust according to strength)
  • 2 tbsp vinegar
  • for garnishing green Chillies

How to Make Chilli Chicken:

1.Mix together the chicken, egg, cornflour, ginger and garlic paste, 2 tsp salt, and enough water so that the chicken pieces are coated with the batter. Leave this for about 30 minutes.
2.Heat oil in a wok or a pan and deep-fry the chicken pieces over high heat to begin with and then lower the flame. Fry until the chicken is cooked through. Drain on absorbent paper.
3.Heat 2 Tbsp of oil in a wok, add onions and stir-fry over high heat until they are translucent.
4.Add the green chillies and saute for a minute.
5.Add salt, soy sauce, vinegar, and the deep-fried chicken, and toss well.
6.Serve hot, garnished with the green chillies.

RECIPE NOTES:
You can serve this chilli chicken recipe with some fried rice or vegetable noodles.

Afghani Chicken Kebabs Recipe With Ingredients

  • juice of 1 lime
  • 100 ml double cream

  1. Add the ginger, garlic paste, white pepper powder, cumin powder, coriander, salt and lime juice in a bowl and mix well.
  2. Add the chicken and mix well. Marinate the chicken in the fridge for 4-24 hours.
  3. Add the cream after the chicken has marinated. Mix it well and skewer the chicken onto bamboo sticks.
  4. Preheat your grill to the highest setting and cook the chicken for 25 minutes, rotating it every 2-3 minutes.
